At our house, Brodo was basically a cozy chicken soup.
The boiled meats were served at the table, and honestly, as a child, it didn’t seem very appealing; But as I grew older, I came to appreciate Brodo a lot more.

Ingredients:
- 2 carrots
- 2 sticks celery
- 1 onion
- 1 clove garlic
- 1 bay leaf
- 1 sprig parsley
- 1 whole chicken (corn-fed if possible)
- Salt and pepper
Instructions:
- Clean your vegetables and fill a large pot 3/4 full of water.
Cooking:
- Add all the ingredients to the pot and bring to a boil over medium heat.
- Once boiling, reduce to a simmer and let it cook for 2-3 hours.
- Remove the chicken, carrots, and celery to a plate for serving. Optionally, add pasta in the last ten minutes of cooking, especially small pasta like stellini.
