Simple Chicken Brodo Recipe

At our house, Brodo was basically a cozy chicken soup.

The boiled meats were served at the table, and honestly, as a child, it didn’t seem very appealing; But as I grew older, I came to appreciate Brodo a lot more.

  • 2 carrots
  • 2 sticks celery
  • 1 onion
  • 1 clove garlic
  • 1 bay leaf
  • 1 sprig parsley
  • 1 whole chicken (corn-fed if possible)
  • Salt and pepper


  1. Clean your vegetables and fill a large pot 3/4 full of water.


  1. Add all the ingredients to the pot and bring to a boil over medium heat.
  2. Once boiling, reduce to a simmer and let it cook for 2-3 hours.
  3. Remove the chicken, carrots, and celery to a plate for serving. Optionally, add pasta in the last ten minutes of cooking, especially small pasta like stellini.
